Praliné — an infinitely variable pâte (paste) of ground nuts and sugar — is one of our favorite chocolate pairings. Here, Nicholas and team draw inspiration from the humble peanut-butter cup, on up to enticing wine-bar provisions. The resulting five Praliné varieties, enhanced with flavorful accent ingredients (such as piment d’espelette, and Linea Caffe organic Colombian coffee beans), harmonize with five chocolate origins in perfect balance.
